Project Description

A small hotel kitchen that had to plate forty covers without looking industrial from the dining room. We hid the line behind a walnut pass and used copper and dark cabinets so the room still belongs to the house.

Circulation is tight by design: mise on the left, heat in the centre, pass on the right. Nothing travels further than a step.

The Challenge in Installation

Commercial extract and a domestic-looking finish do not usually sit together. We built a lined hood inside a timber surround and kept the copper as the only metal you see from the tables.

Services were rerouted overnight so the hotel never closed the dining room.

Guests think it is a house kitchen. The brigade knows it is a line.
